Potato Salad

Ingredient List

  • 2 lbs         Marble potatoes

  • ½ C          Mayo

  • 1              Lemon, juiced

  • 2 tbsp      THE Mustard

  • 1 C          Celery, thinly sliced or diced

  • 1 tsp        Sea salt
                    Fresh ground pepper to taste

Steps to Follow

  • Place potatoes in a med pot and cover with water.
  • Bring water up to a boil, add 1 Tbsp of salt and reduce the heat to a fast simmer.
  • Cook potatoes until fork tender. Drain and place on a sheet tray to cool down completely.
  • In a large bowl, mix the mayo, lemon juice, mustard seeds, celery and sea salt.
  • Refrigerate while you cut down the potatoes.
  • Once the potatoes are cooled down completely, cut in quarters and add to the reserved bowl.
  • Toss gently until well incorporated and top with a little more mustard if desired.
