Festive Pomegranate Salad

Ingredient List

  • 1 lb delicata squash, roasted
  • 1 cup pomegranate seeds
  • 1 granny smith apple, thinly sliced
  • 1/2 lime, juiced
  • 2 bags lettuce mix
  • 1/2 cup crumbled goat cheese
  • 1/2 cup candied pecans

For the Vinaigrette:

  • 1 tbsp The Mustard
  • 1/4 tsp kosher salt
  • 1 tbsp maple syrup
  • 2 tbsp white balsamic vinegar
  • 1/2 cup good olive oil
  • Fresh ground pepper

Steps to follow

  • Pre-heat the oven at 400*F. Clean and slice the delicata squash. Spray avocado oil on a sheet tray, season the squash with salt and pepper and roast for 20 min.
  • Seed the pomegranate into a bowl with water to prevent splatter.
  • Thinly slice the granny smith apple and place in a bowl with lime juice to prevent browning.
  • To make the vinaigrette, pour all the ingredients into a jar with a lid and shake it until the emulsion is made.
  • Place the lettuce mix in a large bowl and layer it with the cooled down squash, pomegranate seeds, crumbled goat cheese, candied pecans.
