Festive Pomegranate Salad
Ingredient List
- 1 lb delicata squash, roasted
- 1 cup pomegranate seeds
- 1 granny smith apple, thinly sliced
- 1/2 lime, juiced
- 2 bags lettuce mix
- 1/2 cup crumbled goat cheese
- 1/2 cup candied pecans
For the Vinaigrette:
- 1 tbsp The Mustard
- 1/4 tsp kosher salt
- 1 tbsp maple syrup
- 2 tbsp white balsamic vinegar
- 1/2 cup good olive oil
- Fresh ground pepper
Steps to follow
- Pre-heat the oven at 400*F. Clean and slice the delicata squash. Spray avocado oil on a sheet tray, season the squash with salt and pepper and roast for 20 min.
- Seed the pomegranate into a bowl with water to prevent splatter.
- Thinly slice the granny smith apple and place in a bowl with lime juice to prevent browning.
- To make the vinaigrette, pour all the ingredients into a jar with a lid and shake it until the emulsion is made.
- Place the lettuce mix in a large bowl and layer it with the cooled down squash, pomegranate seeds, crumbled goat cheese, candied pecans.
